– 1/2 cup almond flour or gluten-free flour blend – Two tablespoons poppyseed meal or ground poppy seeds (optional) – One teaspoon of baking powder – One teaspoon of xanthan gum (optional)

Tip: Substitute your favorite Gluten free flour for the whole-wheat pastry flour within the recipe. It will give you a lighter, more delicate muffin texture.

Carrot Cake Muffins


– 2 cups all-purpose flour (or gluten-free flour) – 1 tablespoon baking powder – 1/4 teaspoon salt – 1/4 cup brown sugar + 2 tbsp honey + 1 egg + 1 tbsp oil or butter + 1 cup grated carrot – Beat all ingredients together until smooth, then spoon into the lined tin - bake at 350F / 175C for 25 minutes
